PUTTU
Ingredients
Rice flour-2cup
Grated Coconut 1 cup
Sallt -to taste
Water-
Usually we are using cocounut shell(chiratta) to make puttu ..But nowadays coconut shell shaped mould with lid is available in the market .
The mould has a small hole in the bottom through which steam can pass to the rice flour.This hole in the bottom has to be attached to a pressure cooker..
Method
Mix the four with 1/2 of the grated coconut .In a glass mix some salt withwater .. Add the water little by little to the flour and mix well..The mixing should be proper so that the flour should not be turn into dough form.It should be in the powdered form only but wet enough for steaming..
Now fill the mould ..First add 1 tsp of grated coconut into it .Then fill the mould with puttu mix and close the lid.
Add 3 cup of water in the cooker .Close it and heat.Take the weight out from the cooker and place the mould to the cooker just after the steam is released.
Now allow it to cook in steam for 5 mins..When u see steam coming out from the small holes of the lid ,then remove the mould from the cooker..And transfer it to a serving plate …
Puttu can be prepared with ragi,wheat or almost all grains of ur choice.
Varathu Aracha Kadala Curry
Ingredients
Black Chana -1 1/2 cup
Tomato-1 (chopped)
Big Onion-1(sliced)
Grated Coconut-1/2
Coriander Powder-1 1/2 tsp
Chilly Powder-1/2 tsp
Turmeric Powder-1/4 tsp
Green Chilly-1(slit )
Ginger- Small piece(chopped)
perinjeerakam-1/4tsp
garlic-2(chopped)
curry leaves-5
Method
Soak the black chana overnight …Wash properly .Take a pan and saute big onion , tomato and curry leaves..Take a pressure cooker, pour chana into it and then add the onion mix ,salt and water(water level should be top of the chana )..Pressure cook it(mostly 12 whistle)..turn of the gas and keep aside and let the pressure settle down ..In the meanwhile heat1 tsp of coconut oil in a kadai and fry all the masalas.(grated coconut,ginger,turmeric powder,chilly powder,coriander powder,perunjeerakam,curry leaves,green chilly ,garlic )..Fry till it become golden colour(as in the picture)
when in is done u will get a nice smell …Then allow this fried mix to cool..Then grind this mix to a fine d smooth paste …
Open the pressure cooker ..Chana would be cooked by now ..Add the fine paste of masala to the chana.Add water according to ur consistency .(It should be neither too thick nor too thin).Allow it to boil ..Boil till the masala get cooked …At the end u will find a thick dark brown gravy..
Then heat 1 tsp of coconut oil and saute the small onions till it become light brown .Add this to the curry ..Now ur vautharacha kadala curry is ready…..
.Serve it with puttu..!!!

i never knew that this kind of mould is available.we used to make in the chiratta.this is wonderful.ur puttu looks exactly the way its made in the chiratta.im already feeling hungry 🙂

Amma makes it well n still uses chiratta.. and sometimes she makes with rava also.. n that also is very soft!
P.S: I didnt know you get moulds like that.. thats kool alle?

ha yea da..eppol egane mould kittunnund ..its so easy to make also .pakshe chirattayil undakkunna puttinu oru pratheka taste thanne yanu kettoo..so u better make in chiratta ..!!!:)

I just tried out the kadala curry.. what can i say…it was tremendously superb!!!!… for long i was looking for that perfect taste for the kadala curry..finally i found one :)…..too good..planning to have with ur recipe of palappam in evening..will let u know how the palappam turned out ok :)…u simply are superb dear :).. How much water should be used for this chiratta puttu? How do we know the consistency that the dough is wet enough to be steamed ? My puttu always turns to be either hard or tastes raw.

Cant tell the exact amt of water ..That depends up on the flour ,coconut and all ..so the thing is we must add water little by little till the flour is wet with out lumps .. u must feel the water (not too watery ) Close for 5 minutes ..i think ur puttu is lacking water ,thats y it tastes raw .. try next time ..
