Ingredients
All Purpose flour (Maida)-2cup
Milk-1/2 cup
Curd-3/4cup
Baking Powder-1 tsp
Baking soda- one pinch
Sugar-2tsp
Salt-
Semolina(rava) -1 1/2 tsp
Oil-for frying
Method
Mix maida,baking powder and baking soda..Mix well..or sieve 2 times ..Then to this add sugar,salt,rava and mix well ..
Then add curd and mix well..Finally add milk little by little and knead well to make a smooth and soft dough.Brush very little oil in the top of the dough ..
Cover the dough with a wet cloth and keep aside for at least 2 hours ..
Heat oil in a kadai ..
Divide the dough into equal sized bit big balls ..
Dust some flour and roll each ball evenly like we roll for poori ..
When the oil is hot ,drop bhature in the oil and press on the top and pour some hot in the top so that the bhature will rise big ..
Turn aside and cook the other side also ..
Drain them in kitchen tissue and serve hot with chole ..

Ingredients
Chickpeas/chana-1 cup
Big Onion-3 chopped finely
Ginger-garlic paste-1tbsp
Green chilly-2 finely chopped
Tomato-2 chopped finely
Kashmiri Chilli powder-1/2tbsp
Turmeric Powder-1/2tsp
Coriander Powder-1tsp
Chena masala -1tbsp
Amchour Powder(Dry Mango powder)-1/4 tsp
Kasuri methi-1/4tsp
Coriander Leaves-
Tea Bag-1
Salt-
Sugar-1tsp
Method
Soak chena overnight .
Wash them well and pressure cook by adding salt and 1 tea bag..
Heat oil in a kadai add ginger garlic paste saute for a second
Then add chopped onion ,green chilli and some salt and saute till light brown shade
To this add turmeric powder,chilli powder,coriander powder ,garam masala and chena masala ..
Saute till the raw smell goes ..
Then add tomato and cook till the tomatoes are cooked well (cook till the oil appears )
Now add amchur powder and kasuri methi …Mix well..
Now add cooked chickpeas and add enough water and mix well..Check the salt ..(remove the tea bag)
Cook for about 20 minutes in low flame ..Add hot water if needed ..Cook till the oil appears in the top…Check salt and sournedd ..add id needed ..
Finally garnish with chopped coriander leaves …
Serve with bhature …
So enjoy Chole bhature …. 🙂
