Pumpkin -2 cup(diced)
Crushed red chilli-1tsp
Salt -to taste
Curry Leaves-1 string
Peel and cut pumpkin into medium size pieces ..
Cook them along with water and salt …
Don`t overcook them …
Crush dry red chillI and onion together ..
Heat coconut oil in a kadai and add the onion chilli mix along with curry leaves and saute till its raw smell goes..
…Then add the cooked pumpkin to this and stir carefully by not mashing too much .. Check the salt ..
Remove from the stove after 2 minutes …
If the pumpkin is not ripe then u can add sugar (its optional only ) ..But it add taste to the dish …
So the tasty mathanga mezhukku is ready to serve ..
Best combination with kanji and rice 🙂
Note : The amount of chilli is purely depening up on u ..So adjust the spice level ..
