We used to make many types of ada ..In that Ela ada is my favorite. Especially my ammammas ela ada.Now I miss that taste and miss her too..Still when I go for vacation my amma used to make it for me ..Here its very difficult to get vazha ela ,so in this vishu season when i got ela ,made ela ada for my family and ofcourse had a feast in ela ..Its a wonderful experience is int it ?Especially when we are far from our home …hmm… 😦
Thought of posting two types of adas today …One is Ela ada (Steamed Sweet dumpling) and other one is poo ada ..Will post other types of adas soon ..
Poo Ada
This ada is for those who don`t like sweets .. 😉 I don`t know the other names of this ada . Its very simple and tasty ..(I took the snaps when I went to kerala )
Ingredients
Roasted rice flour-2cup
Grated coconut-1/2
Salt-to taste
Oil-1tsp
Water-
Banana leaves-for wrapping
Method
In a bowl add roasted flour,handful of grated coconut,one tsp of coconut oil and salt .Now add water little by little and make a soft dough like idiyappam dough.Now divide the dough into small portions .Take a small piece of leaf,place the dough on the leaf ,press and spread out on the leaf.Dip fingers in the water so that spreading will be easy and dough wont stick to ur hand .Spread it evenly .
Now take the grated coconut and spread them in the center
After spreading the coconut fold the leaf in half and press .Press the sides also to avoid spilling out the filling from it)
Make rest of the adas like this .Now take non stick pan and place one or two ada in the pan .Cook them in low flame for 5 minutes .Then flip it and cook the other side also .
So When done remove the leaf and transfer to a serving plate .U can cut into pieces and serve .
Ela Ada
Ingredients
Roasted Rice Flour-2cup
Grated coconut-1/2
Cardamom powder-of 2
Salt-to taste
Sugar or jaggery-according to ur taste
Banana-2 (chopped)
Water-
Oil-1 tbsp
Method
Boil water and add salt and oil in it .Take roasted flour in a bowl and pour the boiled water in it very slowly and stirring continuously (If u pour entire water ,sometime it will become too watery and cant make it as a smooth dough).Mix the dough with a spatula first coz now its too hot to touch .Close the bowl for few minutes .Now knead the dough with ur hand (still the dough is slightly hot ) and make a very soft dough like as we make for idiyappam.Divide it to small balls and keep aside .
For filling –
Boil water and add sugar or jaggery into it .Once the jaggery or sugar has dissolved filter it and remove the dust particles .Then again boil the syrup (here i used sugar ) and make it a thick syrup.
To the thick jaggery or sugar syrup add one pinch of salt ,cardamom powder,banana pieces and grated coconut and mix well.Cook till the filling is thick . Remove from the fire.
Now take small banana leaf ,place the dough , press and spread out on the leaf like we did for poo ada .Spread the dough in thin layer to get a very soft ada .
Take the filling after dough is spread.Spread the filling in the center of the ada( little amount of filling is enough)
After filling fold the leaf in half and press it well to avoid spilling .
Then take a steamer and place these adas in it and steam them for 15 minutes approximately (In between if u want u can simmer the fire and flip t each ada to other side and steam them .We are doing like this to cook each and every side of the ada well)
Take the steamed ela ada from the steamer ,remove the leaf and serve .
Enjoy with hot tea.. 🙂 Like many bloggers said ( i never used) if leaf is not available u can use parchment paper to make this ada,though it wont taste as good as our authentic ela ada 😉
