Ingredients
Water-4cup
Vegetable Cube-1 (opt)
Carrot-1( sliced lengthwise)
Mushroom-5(sliced)
Cabbage-1/4cup (sliced lengthwise finely)
Extra Firm Tofu-thin long strips (5-6)
Cauliflower-4 florets
Broccoli-4 florets
Capsicum-1/4cup(sliced )
Ginger-1tbsp(long stipes)
Garlic-4 (cut lengthwise)
Green chilly-1(slits)
Vinegar-2tbsp
Black Pepper powder-1/4tsp(or according to ur taste)
Soya sauce-2tbsp
Sugar-one pinch
Salt-to taste
Coriander leaves-3tbsp
Coriander steam and root crushed -2tbsp
Spring onion-1tsp
Cellary-1tsp
Corn flour-1tbsp
Method
In a kadai add water along with veg cube (broth), salt ,celery,spring onion ginger ,green chilli,garlic and coriander stem -root crushed..
Let it boil for 10 minutes in medium flame ..
Now add mushroom and boil for 2 minutes ..Then add rest of the vegetables except broccoli and tofu..
Allow to cook until 1/2th done ..Don’t overcook the vegetables ..
Then add vinegar,soya sauce,sugar and pepper powder .. Check the taste .. Add salt,pepper and vinegar according to ur taste ..
Now add broccoli and boil ..Then its time to add tofu ..
Now slowly add cornstarch mix to the soup (mix cornstarch in 1/4 cup of water ).
Add this slowly stirring continuously till the soup consistency is reached(thick ) .
If the amount of cornstarch is high it will spoil ur soup .Cook for another few minutes.
Now add cellary,spring onion and coriander leaves .
Remove from the flame and transfer in to a serving bowl .So the tasty and easy hot and vegetable soup is ready to serve .(U can adjust the amount of ingredients according to ur taste)
Note:If u feel the water is less u can add boiled water to this ..
Brocoli and tofu need very less time to cook ..So always add these two in the end ..
