Ingredients
Raw Cashew nuts-200gm
Chilly Powder-1/2tsp
Turmeric Powder-1/4tsp
Grated Coconut -1/4 of 1
Salt-to taste
Cumin seeds-a pinch
Shallots-5
Garlic-1 pod (opt)
Curry leaves-3
Coconut oil-1 tbsp
Tempering
Coconut oil-1tbsp
Curry leaves-1 string
Mustard seeds-1/4tsp
Dry red chilli-2 (slits)
Method
Soak raw cashew nuts for 2-3 hours ..Then split every cashew into two and wash thoroughly (If u are using fresh cashew no need to soak )..
Cook this cashew in medium fire by adding water,curry leaves ,1/4tsp of chilli powder,little bit of turmeric powder and salt ..It will take time ..min 2o minutes .Don`t cook too much ..Check the salt
In between just blend grated coconut,cumin seeds,shallots ,1/4tsp of chilly powder,garlic (opt),curry leaves ,turmeric powder and pinch of salt .(don’t make too fine ..
Heat oil in a kadai and add the tempering in the order of mustard seeds,dry red chilly and curry leaves ..Then add these coconut mix and just saute to remove the raw smell .
.Then add our cooked cashew nuts and mix very slowly and carefully ..Should cover the masala well ..minimize the fire ,add small amount of water and cover it with lid and allow to settle for 5 min ..Then remove from the fire
Finally sprinkle 1 tbsp of coconut oil and fresh curry leaves and cover ..
Note : U can increase the amount of chilly powder if u want ..Here I used 1/2tsp coz I made especially for my Son … 🙂
