Ingredients
Kadala-1 cup
Big Onion-1 small
Tomato-1 small
Ginger-1 small piece
Garlic -2 small cloves
Curry leaves-2 strings
Coconut pieces -1tsp (finely chopped) opt
Grated Coconut- 1/2 of 1
Green chilli-1
Turmeric powder-1/4tsp
Chilli powder-1/2tsp
Coriander powder-1 1/4 tsp
Fennel seed powder(perumjeerakam)-1/4tsp
Salt – t taste
Water-3-4 cup
Coconut oil-2 1/2 tbsp
Shallots-4
Sugar-less than 1/4 tsp
Method
Soak kadala overnight or at least 6 hours ..
Wash them well and pressure cook along with enough salt and water..6-7 whistle needed .. But it varies ..
Keep aside this cooked chana …
Now heat one tbsp of coconut oil add grated coconut along with ginger pieces,garlic ,green chilli,4-5 curry leaves,2 shallots and roast until light brown shade in medium flame..
Then reduce the flame add turmeric powder,coriander powder,chilli powder and fennel powder and roast till the raw smell goes..
Remove this roasted mix from the stove and allow to cool…
In between heat 1 tbsp of coconut oil and add sliced onion and tomato and cook well and use back side of the spoon and mash well…
Grind cooled masala mix by adding enough water and make a very fine paste ..
Add this paste along with onion-tomato mix to the cooked chana and add 3-4 cups of water and boil well …
Boil till u get a medium consistency …. While cooling it will become bit thick ,so keep this mind and reduce the water according to that …
Check the salt and add sugar and mix well..
Now heat coconut oil and add finely chopped coconut pieces
Roast till light brown ,remove from the oil keep aside
Then add sliced small onion and roast till light brown ,this stage add curry leaves and pour this all seasoning to our kadala curry and mix well and close for few minutes …
So the delicious nadan kadala curry is ready with in no time ..U can serve this with putt,appam,chatty ,poori …..
