Bachelor’s Chole Masala :)

Ingredients

Bachelor's Chole Masala

Easy Chole Recipe

Chickpeas -1 1/4 cup

Tomato-2  1/2 medium

Onion-2 medium

Ginger-medium piece

Garlic-4-5 cloves

Cumin seeds-1/2tsp

Kasurimethi leaves-3/4tsp

Garam masala-1tsp

Coriander Powder-1tbsp

Chilli Powder-1tsp

Turmeric Powder-1/4tsp

Salt-to taste

Black Salt-1/4tsp

Dry red chilli-1

Cloves-3

Cardamom -2

Vegetable Oil-1tbsp (opt)

Water-4-5 cups

Coriander leaves –

Lemon Juice-1tbsp

Method

Wash and soak chick peas overnight or minimum 5 hours..

Drain them and keep aside ..

In a blender add onion cubes,tomato cubes,ginger,garlic ,cumin seeds,kasuri methi,all powders ,salts along with some water and make a very fine paste..

Add this paste to the chick peas along with dry red chilli(pieces) ,cloves and cardamom  and oil …

Add water and mix well and cook in medium flame … 6-7 whistle or till done ..

When the pressure settles down open the cooker and check whether its well cooked or not ..

Then check the salt and add if needed ..

Now cook this chole in medium heat till the oil separates ..

Finally add lemon juice and sprinkle some coriander leaves …

Transfer to a serving bowl and garnish with chopped onion and coriander leaves .

Serve with roti ,rice etc…

So how is this simple recipe ..Anyone can cook this with out sauting ,spending time in the kitchen for long ..

Note : The amount of chilli powder and lemon juice r depending upon u ..So adjust according to ur taste ..

Paneer Tawa Masala

Ingredients

Paneer Tawa Masala

Paneer cubes -200gm

Yoghurt-2cup

Chilly Powder-1/2tsp

Turmeric Powder-1/4 tsp

Coriander Powder-1/2tbsp

Garam Masala-2 pinch

Ginger-Garlic Paste-1tbsp

Salt-

Capsicum-1/2 (cubes)

Tomato-1(cubes)

Big Onion-1/2(cubes)

Red Food colour-a pinch (opt)

Chat Masala-2 pinch

Cumin Powder-2 pinch

Kasuri methi(dried methi leaves)-2pinch

Water-

Coriander leaves-for garnishing

Method

Strain the yoghurt using a muslin cloth .(Pour yoghurt in the cloth ,wrap it and hang it until all the water get strained ..)Keep aside.

For the marination make a paste by adding yoghurt ,chilly powder,turmeric powder,coriander powder,garam masala,ginger garlic paste ,food colour and salt.Mix well using a fork..

Marinate paneer cubes using this paste ..Keep it for minimum 1 hour .

Then heat oil in a nonstick tawa and place marinated paneer one by one ..fry both sides in medium heat ..and keep in a kitchen tissue ..

And after all the paneer are done u can see some leftover marinade there ..dont throw it away ..we need that paste for making masala ..

Now heat 1 tbsp of oil in a non stick pan and add our vegetables ..Saute for one minute

Then add salt,garam masala and cumin powder kasuri methi ,and chaat masala..Mix well..
Now its time to add the paste ,mix well.Add some  hot water to get a gravy .or u can add milk instead of water.Check the salt.

Then add our fried paneer to this and allow to cook in this masala gravy for 2 minutes ..Finally garnish with coriander leaves

If u like ur dish to be bit sweet ,don`t hesitate to add a small portion of sugar too 🙂

Ingredients

Aloo-Gobi

Potato(Aloo)-2

Cauliflower(Gobi)-1cup

Chilly powder-1/4tsp

Coriander Powder-1/4tsp

Amchur Powder(dry mango powder)-1/4tsp

Ginger Garlic Paste-1tsp each

Big Onion-1

Green chilly-1

Tomato-1(medium)

Salt-to taste

Oil-1tbsp

Garam masala-2 pinch

Water-1/2cup

Kasurimethi (dry fenugreek leaves)-1/4tsp

Turmeric powder-1/4tsp

Coriander leaves-1tbsp

Hing powder-one pinch

Cumin seeds-2 pinch

Aloo-Gobi

Method

Peel and wash the potato..Cut into medium cubes.

Keep them in the water.

Wash the gobi florets and keep that aside .

Heat oil in a non stick pan .

Splutter cumin seeds.Then add ginger-garlic paste

Saute for few seconds in low flame .Now add hing powder and turmeric powder.

Saute well and add finely chopped onion,green chilly and tomato ..

Stir fry for 10 minutes in medium flame .

In between take 1/2 cup of water and to this add coriander powder,garam masala,chilly powder and dry mango powder.mix well.

(if u dont have the dry mango powder,increase the amount of tomato to get the needed sourness.)

When the onion and tomato mixture is well cooked add this masala water along with salt .

Allow to boil well

Finally add potato and cauliflower.

Mix well..Sprinkle some water and close the pan allow to cook in medium flame.

Occasionally stir well.Will take 10-15 minutes

Finally garnish with coriander leaves.

Serve with chapathy,rice ,nan or food of ur choice

Paneer Butter Masala

I wish my readers  a very Happy Valentines Day ….Have a blast ….

Today i am here with paneer butter masala ,my son`s recent favorite  dish ..He like paneer butter masala with coin porotta ..I searched  for coin porotta`s recipe  in net  ..But didnt get ìt ….So if any one of u know the recipe plz pass it to me ..  🙂  ..Yesterday ,b4 going to school he demanded this dish for the lunch  😉 .But i was in a lazy mood to go for a complicated recipe.So i googled for the recipe and finally find it in vah chef`s site ..Its so easy to make and tasty tooo ..Thanks a lot Vah Chef ..So here comes the recipe

Ingredients

Paneer-250gm

Butter-2tbsp

Red food colour-1/4tsp

Kasuri methi-1/4tsp

Coriander powder-1tsp

Chilly powder-1/4tsp

Ginger-garlic paste -1tsp

Tomato Ketchup-1tbsp

Tomato paste-1tbsp

Fried Onion-1tbsp(opt)

Milk-2 cup

Salt-to taste

Method

In a bowl add 1 cup of milk  ,coriander powder,chilly powder,tomato ketch up , tomato paste kasuri methi,colour  ,salt and mix well ..Keep it aside ..

Cut the paneer to small cubes and shallow fry them ..Keep them aside

In a pan melt butter ..Add ginger -garlic paste and saute them ..Now add crushed  fried onion

Then add the milk which is mixed with all powders ..Cook in a low flame for 3 minutes by covering the pan ..

Now add the fried paneer  to this .Add salt and remaining 1 cup milk  to this by little by little .Cook for another few minutes stirring continuously.If u want u can add fresh cream ..So the tasty and quick Butter paneer masala is ready to serve … Serve hot  with nan chapathy etc …

Butter Chicken

Ingredients

butter chicken

Chicken -250gm

Onion-1 medium

Sugar-1tsp

Tomato-3 medium

Ginger-garlic paste-1tsp

Butter -3tbsp

Cashew nuts-10

Badam-3

Fresh cream -3tbsp(opt)

Chilly Powder-1/2tsp

Coriander power-1/4tsp

Cumin powder-1/4tsp

Turmeric Power-2pinch

Green chilly -1

Cardamom powder- 2 pinch

Oil-for frying

Water-2cup

Kasurimethi powder- 1/2tsp

Garam masala-1/4tsp

Coriander leaves-1tbsp chopped

For marination

Chilly powder-1tsp

Cumin powder-1/4 tsp

Garam masala-two pinch

Yogurt-2tbsp

Lime juice- 1tbsp

Salt- to taste

Ginger garlic paste-1tbsp

Method

Cut the boneless chicken  in to medium strips.Marinate the chicken pieces with the above mentioned ingredients and keep aside for minimum one hour .

In between heat 2tbsp of butter and add  cashew nuts and badam ..roast them

Then add chopped onion along with some salt.. Saute till translucent ..

Then add ginger-garlic paste,chilli powder,cumin powder, cardamom powder ,garama masala powder,turmeric powder and coriander powder and saute till the raw smell goes ..

Then add tomato pieces and cook well..When cooked  remove from the fire and wait for this mix to get cool..

After the mix gets cool,grind to a fine paste by adding water ..Using a seive drain the purée and keep aside..

Fry the chicken pieces till 3/4thcooked .. (The chicken should be very soft) .

Heat butter and add green chilly slits.(deseed the chilly and cut into lengthwise).

Saute for few seconds  and then add tomato purée and water ,combine well.

Cook in medium flame  for 10minutes .

Then add kasurimethi .Stir well again cook for 5 minutes.Check the salt ..

Add if needed ..Then add sugar and mix .. Now add the fried chicken pieces and cook in a medium flame for 10 minutes  ..Combine all together very well..Check the salt ..

Cook until the gravy thickens and by this time the sourness will be gone ..

Finally add fresh cream ..Its optional only ….After adding cream dont boil the gravy.Check the taste and add lacking things  according to ur taste..

..Finally sprinkle  kasuri methi and coriander leaves ….So the very delicious butter chiken is ready to serve.

Note : The amount of cream and masala powders can be change according to ur personal taste ..

If u want u can add  and orange food colour ..
