Hello dear friends ..First post of 2015 ..Hope u had a great Christmas and New year .. here comes my weakness 😉 Vanilla Panna Cotta !!!

Ingredients

Double Cream or Thick Cream-300ml

Milk-300ml

Sugar-5tbsp or up to ur taste

Salt-one pinch

Vannilla essence -1/4tsp

Plain Gelatine-1 1/2 tsp

Water-1/4cup

Method

Take 1/4 cup water and sprinkle gelatine and allow to sit for 10 minutes ..

Take a blender and add cream ,milk,sugar ,salt and vanilla essence ..

Give a blend ..

Take a deep bottomed pan and add this cream milk mixture ..

Heat and switch off just before boiling ..

Add soaked gelatine to this mix well ..

Give a taste test .. Sugar should be bit higher to ur taste ..(so when cooled it will be perfect )

Strain this mix and pour this to desired moulds and allow to reach room temperature ..

Then transfer to refrigerator and allow to set for minimum 6 hours or over night …

For the glaze ..

Open the passionfruit and take the pulp .. Try to purchase sour type passion fruit ..here i didn’t get that  type ..So added 1/2 tsp of lemon juice to get that sweet tangy taste ..

To a pan add 1/2 cup of water ,fruit and sugar  and allow to boil and allow to thicken .. Give a taste test ..

Keep aside and after reaching room temperature transfer to fridge ..

When the panna cotta is set serve with passion fruit glaze..

If u want to un mould ,dip the mould in hot water for second and then de mould …

Ingredients

Vanilla Panna Cotta with Fruit Salad

Vanilla Panna Cotta with Fruit Salad

Double Cream-500 ml

Milk-100 ml

Caster sugar/icing sugar-4 tbsp (or as ur taste)

Vanilla essence-1tsp

Salt-one pinch

Gelatin (plain)-one sachet pack (7gms)

Note :

If u r using thick cream instead of double cream then the measurement is  given below

Thick cream-300ml

Milk-300ml

Method

Mix both double cream and milk  very nicely or thick cream and milk

Pour into a heavy bottomed sauce pan and add sugar.Mix well and slowly bring to simmer ..

Stir well for 2 to 3 minute in medium hot ,by that time the sugar will be dissolved .

Remove from the heat and add vanilla essence and stir well and  keep aside ..

Meanwhile to 100 ml of water sprinkle gelatin and leave for 10 minutes.

Then add the gelatin to the cream mixture and stir continuously till all the gelatin fully dissolved..Add pinch of salt and mix well.Check the sugar..If u want more add according to ur taste.

Pour this to a glass jug..Then pour into the glasses ,bowls or of ur choice ..Let it to cool down to the room temperature.

Then keep refrigerate for minimum 6 hours or overnight if preparing ahead .

For the fruit Salad

Ingredients

Water- 1 cup

Suagr01 cup

Rose water-1tsp

Vanilla essence-1tsp

Lemon Juice-1tsp

Salt- one pinch

Fruit of ur choice. Here I used

Pine apple-1/2 cup

Mango-1/2cup

Apple-1

Ripe Plantain-1 small

Strawberry-3

Seedless Grapes-10

Raisins-few

Method

At first make a sugar syrup by adding water and sugar and allow to boil for 10 to 15 minutes

To this vanilla essence ,lemon juice ,rose water and salt..Mix well..

Then add finely chopped pineapple to the syrup and stir well and cook for 10 minutes..

Remove from the heat..Keep aside  .

After coming down to room temperature chop allother fruits and add to the pineapple syrup  and mix well..

Then keep it in the refrigerator.

Serve with Panna Cotta and enjoy… 🙂
