Spicy Chemmeen/Prawns Ularthiyathu

Ingredients

Chemmeen Ularthiyathu

Prawns/Shrimp-1kg

Ginger-one big piece

Garlic-10 pods

Green chilly-2

Big onion-2big

Small onion-10

Chilly powder-2 1/2tbsp

Turmeric powder-1tsp

Kudampuli-2

Coconut Pieces-10

Salt-to taste

Curry leaves-3 strings

Water-3cup

Coconut oil-2tbsp

Chemmeen Ularthiyathu

Method

 

Crush ginger-garlic and keep aside .

Soak kudampuli in water for 10 minutes

Wash them well and keep aside .

In a kadai add cleaned,washed prawns along with half of the crushed ginger-garlic ,curry leaves(1 string),coconut pieces,half of the chilly powder,turmeric powder ,salt,kudampuli and water .

Kuttanadan Chemmeen Ularthiyathu

Close the kadai for 10 minutes and cook ,then open the lid and cook till all water get evaporates

Keep this cooked prawns aside.

Now heat coconut oil and add thinly sliced big onion,green chilly ,salt and rest half of the crushed ginger-garlic .

Saute till the onion become medium brown in colour .

Now add small onion and remaining chilly powder

Saute well till the raw smell of the chilly powder goes.

Now its time to add our cooked prawns masala.

Mix well with onion mix and saute for 15  more minutes

That time u can see the prawns are well coated with masala and onion ..

Now add plenty of curry leaves and saute for 5 minute in low flame ..

Remove the kudampuli b4 serving .. 😉

So very simple but yummy chemmeen ularthu is ready to serve..

Prawns Pickle /Chemmen Achar

Ingredients

Fresh Prawns-1 kg

Refined Oil-for frying

Curry leaves-4strings

Ginger-2tbsp(lengthwise)

Garlic-8 to 10 (thin lengthwise slices)

Garlic pods-5 (without cutting)

Green Chilly-10(slits)

Chilly powder-11/2tsp

Kashmiri chilly powder-2tsp

Turmeric powder-one pinch

Asafoetida powder(kaayam)-one pinch

Fenugreek powder(uluva)-1/4tsp

Vinegar-1/2cup plus 3 tbsp

Lukewarm Water-1/2cup

Sesame Oil-3tbsp

For marination

Chilly Powder-2tsp

Turmeric-1/8 tsp(very small amount)

Salt-to taste

Method

Remove the shell and devein the prawns.

Wash them properly using salt and vinegar .

Drain the prawns .Cut each prawns into 2 pieces.(here I used medium sized prawns)

Mix salt ,turmeric and chilly powder and rub into the prawns.

Keep aside this marinated prawns for half an hour .

Heat oil and fry the prawns.(fry 3/4th )

Don`t make it too crisp and hard .Otherwise it will become hard.

Keep that aside.

In the sesame oil deep fry ginger ,garlic,green chilly and curry leaves separately .

Mix both the chilly powders  with 3 tbsp of vinegar and make a paste ..

Saute this chilly paste and the turmeric in the same oil we fried ginger .

Then add fenugreek powder and asafoetida powder .Then add prawns ,garlic pods (5) fried ginger -garlic-green chilly -curry leaves and stir well.Then add half cup of vinegar and half cup of lukewarm water .

Add salt.Bring it to boil and continue cooking on low flame until the prawns are well coated with the masala(10 minute)

Check the salt .Add more  if u needed.

When cool transfer this to a airtight container

Pour a table spoon oil (the same oil we used to fry the prawns) on the top of the pickled prawn.Oil should be stand in the top of the pickle(we r doing like that to avoid fermentation). Allow it to rest for few days before having..

After few days u can keep it in refrigerator . Enjoy yummy prawns pickle with rice.

Note

If u r using king prawns then cut it to 3 or 4 pieces.

This is one of my personal favourite and this is the one which made me confident in my cooking ..Of-course thanks to my Amma …I guaranty about this recipe, if u make with exact quantity ,u are going to get a fantastic prawns roast and u will love it ….After that write to me k ….

Ingredients

1.Prawns – 1kg

2.Red Chilly powder -1 1/2tbsp

3.Kashmiri Chilly powder-1 1/2 tbsp

4.Turmeric powder -1 tsp

5.Green Chilly-4

6.Ginger-medium piece

7.Curry leaves-plenty of

8.Coconut Oil-4Tbsp

9.Salt-to taste(11/4 tsp)

Method

Take the shells out from each prawns and wash well .. Keep aside

Grind the chilly powders,turmeric powder,green chilly,ginger ,salt and curry leaves(10no) to make a fine paste…

Take a deep bottomed non stick pan and add prawns into that .. Add the fine paste of masala to the prawns ..Add 31/2 glass of water in to this and mix well..

Allow the prawns to cook …Cook it till the prawns becomes dry with masala .There should be no water left…

(U can see the prawns to be dark red in color with thick masala over it ..(Check the  salt and  spice.If u need more  add according  to ur taste .)

To this dry prawns masala add 2 tbsp of coconut oil and 20 curry leaves and saute well..Roast in low flame .in between keep on adding curry leaves and coconut oil .

Roast till the prawns get dark red color..( ..When it ready u will get a very nice and fine aroma …..

If u want u can roast it some more time.

Then remove it from fire and transfer into a serving bowl and decorate with green chilly and curry leaves …

Note :

The quantity of the chilly powder vary according to the size of the prawns..

Here i used big prawns.

If u got small one then reduce the chilly powder.

Special Tiger Prawns Roast

Ingredients
Tiger prawns-10nos

Chilly powder-1/2tsp

Turmeric powder -1/2tsp

Green chilly paste -6nos

Garam masala powder -1/4tsp

Lemon Juice-1tbsp
Big onion-2(finely chopped)

small onion -20 nos(finely chopped)

Salt-to taste

Coconut Oil-4tsp

Curry leaves-plenty of

 

Method
Wash the prawns properly ..Don`t remove the shell and the head..Remove the vain carefully …Then marinate the prawns with ginger -garlic paste ,green chilly paste ,turmeric powder,salt and lime juice for 8 hours ..

Then take a kadai and add the marinated prawns and close the kadai with a lid ,and cook it for 5 min s in low flame..(with out water …)

Now heat oil in a kadai and add lots of curry leaves,then add finely chopped big onion and small onions , saute them well ..When it become brown in colour then add garama masala , chilly powder d salt and stir well ..Finally add the cooked prawns,mix them well and fry it ..Fry it till the brown color comes…So ur tiger prawns is ready to serve ..Serve hot ..

While eating remove the shell and the head !!!I didn`t get Tiger prawns ,so here i used ordinary prawns ..
