Ingredients
Basmati Rice/Jeerakasala Rice-2cups
Big Onion-1/2 sliced
Green chilli-1/2 of 1 (slit)
Fennel seeds-2pinch
Cardamom-2
Cinnamon-1 small stick
Cloves-2
Water-3 1/4cup
Salt-
Ghee-2 tbsp or ghee plus oil
Raisins-20
Cashew nuts-10
Pineapple chopped- 2tbsp(opt)
Yellow colour(opt)
Onion-1 for frying
Method
Wash rice thoroughly and soak for 30 minutes.
Then drain the rice and keep aside..
Heat ghee and roast raisins ,cashews and 1 onion separately till light golden brown ,keep aside..
Heat ghee in a medium size cooker.. I don’t like ghee smell overpowering ..so I always use ghee and oil combination ..
Now add cinnamon,cardamom ,fennel seeds , cloves and saute for a minute .
Then add sliced onion and green chilli slit .. Saute till the onion become translucent ..
Then add rice and stir for 3 minutes in medium flame.
Now add boiling water and salt .. Salt should be bit higher so when cooked it will be fine (don’t add too much ok 😉 ) mix well
Now close the cooker with out putting weight ..
When u see steam coming out put the weight and cook for 1 whistle in high flame .
Then switch off the flame and allow the pressure to settle down.Open after 20-25 minutes ..
When done open the cooker and with the help of a fork fluff the rice ..
Finally garnish with fried raisins, cashew nuts and onion ..If u want u can add yellow colour mixed with essence and sprinkle ..
can add pineapple too 🙂 ..Personally i love that flavour ..
So serve the yummy ghee rice with chicken curry or ur personal favourite dish …
