Cut eggplant into same size and keep in the salt water …
Drain well and marinate the fish and eggplant pieces with salt,pepper and lemon and keep aside for 15 minutes ..
Careful while adding salt into the eggplant coz we already added salt in the water
Heat very less amount of olive oil and shallow fry the fish pieces in medium flame (5 minutes in each side )
Then shallow fry the egg plant also (3 minutes in each side ,u can vary the time according to the egg plant u r using )
Then marinate little bit salt in the onion slices and just saute for 2 minutes (till translucent )
Then in a bowl add all the ingredients one by one that is finely chopped tomato,cucumber ,salt,pepper powder,onion,fish,eggplant ,olive oil(1/4tsp) and balsamic vinegar ..
Mix well ..(if u want u can very less amount of lemon juice also )
Check the taste ..
Then for plating, place this salad into a lettuce leaf and keep two lemon wedges in the sides ..
So the healthy and yummy fish-eggplant salad is ready to serve ..
Cherry Tomatoes -5 or Normal tomato-1 (Remove seeds if u r using big one )
Salt-to taste

Thai Papaya Salad/Som Tum
1.To make green papaya salad,First prepare the papaya by peeling the dark green skin. Then, hold the papaya in your hand, and smack the fruit lengthwise with a good sized knife. You want to create 1/2″ or so deep cuts into the fruit. Do this over and over until you’ve created a good amount of cuts. Watch your fingers! Then, cut the papaya lengthwise to produce long strips. You can also buy tools which can create long shreds, or even use a cheese grater (the big holes).

2.Same way cut carrot also ..
3.Cut the long beans into 2 inch pieces ..And cut the cherry tomato into 4 pieces .
Here I am going to make vegetarian version of papaya salad..In non-veg version they used to add dried shrimps and crab meat..
4.You would need a wooden or earthen mortar and pestle for this recipe as the ingredients have to be lightly pounded to combine together. Don’t have one, you can still make this salad by just combining the ingredients using your hands 🙂
So crush garlic and chilli together ..Then add sugar followed by fish sauce and lemon juice ..Give taste and add salt if needed ..If u r a pure vegetarian u can omit fish sauce ..
And u can vary the amount of chilli according to ur taste ..
To the crushed mix add tomato and shredded papaya ,carrot and long beans ..Mix well as shown in the video ..Or mix well with ur hand ..Give a taste and add if anything needed ..
So the wonderful sweet-sour-salty papaya salad is ready ..Transfer to a serving plate and decorate with some roasted peanuts ..
Nb: If u want to add shrimps ,add 1 tsp of dried shrimp into the mortar along with garlic and chilli and crush ..Avoid fish sauce ..
