Bread Vada Recipe
Ingredients
Bread -8 slices
semolina -1/2cup
Rice flour-1/4cup
Curd -3/4cup
green chilli-4
Ginger-1tsp chopped
Onion-1 finely chopped
Curry leaves -1 string
Hing-1/4tsp
Salt-
Oil- for frying
Method
Make bread slices into small pieces .. Then into that add all other ingredients .. mix everything well ..
sometimes u need to add more curd for binding ..
so use according to that ..
u must get a soft dough ..
u can add seasonings and change spice level according to ur taste ..
Heat oil .
when medium hot take small portions of the vada mix and roll out into balls and press in the palm and make a hole in the centre (wet ur finger and palm ,so dough won’t stick into ur hands) and put into the oil ..
fry both sides until golden colour ..
the oil should be medium hot ,other wise the outer side will be golden colour as soon u put them in the oil .. so take time fry these .. if the heat is very low the inner side won’t be cooked well ..
so temp of the oil is imp ..
transfer to a tissue ..
Curd Bread Vada
Ingredients
Vada-15
Curd-1 kg
Mustard seeds-1/2tsp
Green chilli-4-5
Curry leaves-2 strings
Ginger-1tsp
Asafoetida Powder-less than 1/4tsp
Dry red chilli-3
Coriander leaves-few
Boondi-2-3 tbsp
Cashew Nuts -15
Raisins -15-20
Salt-
Sugar-2 tbsp
Chilli powder-1/4tsp
Sesame Oil-2tbsp
Urad dal-1/4tsp
Method
Take a deep bottomed bowl and add curd ..
Beat curd well with a fork .. Then add sugar and salt ,mix well and keep aside ..
Heat oil and roast cashew nuts and raisins ..Remove and keep aside ..
Then to that add dried red chilli slits ,then mustard seeds and urad dal ..
When it splutter lower the flame and add curry leaves ,finely chopped green chilli,ginger ,saute for few seconds ..
Then add chilli powder and hing ..
Now pour this seasoning to the curd and mix well ..
Add roasted cashews and raisins (keep few for garnishing in the end )
..Give a taste test .. add seasoning if something lacks ..
Then place vada one by one and soak them for half an hour in the curd b4 serving …
Garnish with coriander leaves ,boondi ,cashew and raisins.. and can sprinkle some chilli powder also ..
I like my curd vada to bit sweet spicy and tangy ..
So depending up on ur taste u can change the seasonings.. Hope u will try this and let me know the outcome
