Vegetable Stew

Green chilly-2(slits)

Thick coconut milk-1cup

Thin coconut milk-1cup

Big onion-1

Curry leaves-2 strings

Ginger-very small piece

Coconut oil-1tsp

Method

Wash and chop all the vegetables into medium sized pieces.

Take a pressure cooker ,add all the vegetables along with salt ,onion slices and 1/4 cup of water .1 whistle is enough

When the pressure settle down open the cooker , add thin coconut milk along with green chilly ,curry leaves and chopped ginger .Stir well.

Allow it to boil and when it become very thick add thick coconut milk to this.

Boil for 1 minute .Check the salt ..Finally garnish with 1 tsp  coconut oil and  string of curry leaves ..

Close the cooker for 5 minutes .

By this time the stew looks like very creamy and medium thick  form ..So transfer the tasty stew to a serving dish and serve hot with palappam ,dosa etc …

Stir Fried Vegetables

Vegetable stir fry

Ingredients

Mushroom-10 (cut into quarter)

Zucchini-2(cut into quarter)

Tomato-2(sliced)

Red Capsicum-1(cut length wise)

Yellow Capsicum-1(lengthwise)

Green Capsicum-1(lengthwise)

Garlic-2

Red Onion-1(sliced)

Broccoli-1 cup(florets)

Snow peas-10(cut into half)

Fresh pepper powder-1tsp

Olive Oil-2tbsp

Salt-to taste

Method

Cut all the vegetables  ,wash and drain them.In a wok or non stick frying pan ,heat olive oil in a high heat until almost smoking.Add three types of capsicum and red onion while stirring continuously for 2 minutes  .While stirring add rest of the vegetables except snow peas.Stirring continuously add pepper powder and salt and stir for another 2 minutes .Finally add snow peas,stir well ..Check the salt ..Remove from the fire and serve immediately.

Easy & Tasty Aviyal in Cooker (Especially for Bachelors..) :)

Ingredients

Raw plantain (pacha kaya)-1

Ash Gourd (Kumbalaga)-1/2cup

Drumstick (muringakaya)-2

Elephant Yam(chena)-1/2cup

Beans-3

Long beans-2

Snake Gourd(padavalanga )-1/4cup

Carrot-1/2

Shallots(cheriya ulli)-18

Ginger -2 small pieces

Curry leaves-2strings

Green Chilly-6

Turmeric powder-1/4tsp

Coconut Oil-2tbsp

Salt-

Yogurt-3tsbp(beat with a spoon)

Grated Coconut-1/2 of 1 coconut

Cumin powder-1/4tsp or cumin seeds-15

Method

Wash and cut all the vegetables into lengthwise pieces (u can use any vegetable except brinjal,ladies finger and pumpkin) .

Crush (chathakkuka) 10 shallots ,one piece ginger ,1string curry leaves and 4 green chilly .

In a cooker pour all vegetables ,crushed onion mix,turmeric powder,salt and 1tbsp of coconut oil and mix them well.

Add 1/4 cup of water .

Pressure cook until the steam began to come .Don`t wait for the whistle to come .Switch off the gas and wait for 3 minutes.Then open the cooker by pouring water over it .

Make sure water is not too much or else the dish will be watery and not thick when done .(So after the vegetables are done if u feel the water is more than enough then drain the excess water to a bowl .)

By this time blend coconut ,3 shallots and cumin powder together (no need to grind ,just give a whip).

Add 3tbsp of curd to the cooked vegetables and mix well .(If u feel the sourness is not enough u may add more)

Check the salt .If u feel more salt is needed then add needful amount of salt to the coconut mixture and mix well..

Add this coconut mix and the onion mix(Crush 5 shallots ,1 piece ginger ,2 green chilly and 1 string curry leaves )to vegetables and add 1 tbsp of coconut oil .

Just try to cover the vegetables by coconut and onion mix (kai kondu nannayi pothy vakkuka) .

Switch on the gas and allow the steam to come through the aviyal (in low flame for 5 minutes ).

Turn off the gas and carefully stir the aviyal ..Transfer this to a serving bowl .

Sprinkle 1 tsp of coconut oil and close the bowl ..Serve hot with rice

Simple Beetroot Vazhattiyathu

Ingredients


Beetroot -2(chopped finely )

Big Onion-1 chopped finely

Green Chilly-2 chopped

Curry leaves-1 string

Ginger -very small piece chopped

Salt -to taste

Mustard seeds-1/4tsp

Method

Cook the beetroot in a cooker by adding very little water and salt

Heat a pan splutter mustard seeds and then add the chopped onion,green chilly ,ginger  and curry leaves ..

Saute them until  it become translucent.

Then add the  cooked beetroot and mix them well .

Saute for another 2 minutes and remove from the fire ..

Now the beetroot is ready to serve .

Serve with rice ,curd and pickle …!!!Its a good combination

Simple Kumbalaga Olan

Kumbalanga(Ash Gourd)-2 cups(small pieces)

Thick Coconut Milk-1 cup

Water-1/2 cup

Green chilli-2

Curry leaves-1 string

Salt – to taste

Sugar- 1/4 tsp

Coconut Oil -1 tbsp

Method

 

Cook Kumbalanga in pressure cooker by adding green chilli ,salt ,curry leaves(2-3) and water ..

2-3 whistle is enough ..After cooling down open the cooker and mash the cooked kumbalanga well..

Place the cooker for 1 minute in the stove .

Now add thick coconut milk and sugar(the coconut i used to but here in dubai is that good ,so i used to add sugar )and  mix well..Remove from the flame ..Check the salt

Finally sprinkle coconut milk and few curry leaves and close the cooker for few minutes before serving ..

So easy and tasty olan is ready to serve ..

Simple Eriserry In Pressure Cooker (Kuthu Eriserry With Pacha Kaya )

Method

Peel the raw plantain and cut into thin slices and wash properly using salt .. .

Finely grind 1/2 portion of the grated coconut ..

Take a cooker and pour the washed kaya into it ..

Add ground paste ,chilly slits,salt,curry leaves with 1/2 cup of water ..

Mix well and cook …1 whistle is enough ..

Remove from the fire..

When pressure settle open the cooker..

Mash the cooked kaya with a spattula ..

Heat  oil in a kadai  ,add dry red chilly,splutter mustard seeds and add curry leaves ..

Now add the remaining grated coconut to a fry pan and fry till brown colour ..

Add this to the cooked kaya and mix well ..Mash well ..

So easy kaya eriserry is ready ..

Simple & Tasty Dal d Tomato Curry/Parippu & Thakkali Curry

Toor daal(sambar parippu)-3/4cup

Dry red chilly -4 or (crushed chilly -2 tsp)

Tomato-1 big(sliced)

Turmeric powder-one pinch

Salt-to taste

Curry leaves-1 string

Small Onion -10 no

Oil-2tsp

Method

Soak dal for 10 minutes ..

Wash thoroughly..

Pressure cook dal  and tomato along with water  turmeric powder and salt ..One whistle is enough..

Then crush  small onion and chilly together.

Heat oil in a kadai and add the chilly- onion mix and curry leaves ..Saute them well in medium flame…

At least for 5 mins and then add the cooked daal and tomato …Mix well and allow the curry to boil for 5 mins …

Check the salt.

Simple but yummy dal curry is ready with in no time ..Serve it with rice ,chapati  etc….

Dal curry with rice, curd and pickle is a very nice combination ……

U can also make daal curry without tomato with the same recipe..

Erupuli/Pazham Pulissery /Pazham Kalan

 Its a sweet version of kaalan..

Ripe Plantain(Nendra Pazham) -2 (peeled and cubed)..The pazham should be 3/4 th riped..too much ripe banana is not good for this )

Chilly Powder-1/2 tsp

Turmeric powder-1/4 tsp

Cumin seeds-1/4 tsp

Garlic-1/2 of a clove

Black Pepper-5 no

Curry Leaves-1String

Salt-to taste

Grated Coconut-1/2 of 1

Curd- 1cup or 400gm

Dry red chilly(vattal mulaku)-3

Mustard seeds(kaduku)-1/2 tsp

Fenugreek seeds(uluva)-1/4tsp

Method

Cut the plantain into half portion(lengthwise) and then cut into cubes..

To the plantain pieces add chilly powder,turmeric powder,salt , curry leaves and one cup of water and cook till the plantain pieces get soft ..

To a blender add grated coconut ,cumin seeds,pepper and garlic and grind to a fine smooth paste …Add this paste to the cooked plantain pieces.Slowly mix the paste with the pieces..

Add 1/2 cup of hot water ,mix well and boil in medium heat..

When it start boiling then add mooru (just whip one cup of curd in a blender) ..After adding the curd lower the heat and cook for 5 minutes by stirring continuously..

Then heat 2tsp of coconut oil and add dry red chilly (cut in to pieces),then fenugreek seeds followed by mustard seeds and curry leaves…Add this to the gravy and close the pan with a lid so that the aroma spread into the curry…

Transfer the curry into a serving dish and decorate with curry leaves and red chilly…Enjoy ur sadya with Erupuli a sweet and sour delicious curry 🙂
