Payasam Rice-2 handfull
Sugar-1/2 to 3/4 cup
Salt-one pinch
Water-1cup
Milk-1 L
Method
Soak rice for 20 minutes ..
Wash well and drain
In a big cooker add rice ,water ,sugar and milk ..
Boil well ..
Then close the cooker and cook for 30 minutes in low flame .
Then switch off the gas and allow to cool..
After cooling down open the cooker and add pinch of salt ..
So easy and tasty milk payasam is ready to serve.
If u want Ambalapuzha style pink rice payasam ,extend the cooking time to 1 hour ..
Can adjust the sugar level according to ur choice ..
If u want u can add cardamom ,cashew nuts and raisins ..But in Temple payasam they won’t add any of these ..
If u want to get that exact smell and taste of temple payasam u can add one fresh krishana thusli leaf (basil )and some chethi poo .:)

Peel mango and cut into medium pieces ..If u don’t have fresh mango u can use tinned mango pulp also ..
Fresh Alphonso is the best option ..
Then combine milk or heavy cream with mango pieces and sugar In a blender and make a fine puree ..
In 2-3 tbsp of cold water sprinkle gelatine and allow to soak ., Then heat this for few seconds until all the gelatine dissolves..
After Cooling down add this gelatine to the mango mixture and blend well ..
Now whip the cream to soft peaks and fold in to this gently ..(half portion of the cream ) Keep aside the rest
I used dream whip powder.. I like the taste of dream whip cream than the fresh cream …
So for making dream whip ,add 2 sachet of powder to one cup of cold milk ,and 2drop of vanilla essence and mix..
Take a hand blender and beat for 5 to 10 minutes in high speed or till u get the soft peaks ..
Now take serving glass or bowl ,add a portion of the mousse to the bowl, then add one to two tbsp of whip cream ..
Then another layer of mango mousse ..Cover and refrigerate for 3 to 4 hours or until set ..
Finally pipe whip cream to the top and decorate with a cherry ..
Enjoy the delicious mango mousse ..U can keep this in the fridge for two days …
Note : I like soft type of mousse ..so here i used 2 tsp of gelatine …If u want stiffer texture u can add more gelatine ..
If u want to bite mango pieces in between ,u can add small chunks of mango in the mousse or after putting one layer of the mousse and keep in the fridge for 10 minutes then add mango pieces and then mango mousse .. ..

In bowl add maida ,salt and baking powder .. Sieve two to three times and keep aside ..
Cook nuts and tutti frutti in orange juice(3/4 cup) and honey till it cooked well and become dry (all juice should be absorbed )
After cooling this mix sprinkle 3tbsp of flour and keep aside ..
In a wide and deep bowl put butter and using a hand mixer mix for about 1 minute
Then add sugar in small quantities and blend well until it become very smooth
Now add egg one by one and mix well in medium speed for 3 to4 minutes or till the mix become fluffy
Then add vanilla essence .. Mix well ..

Now add flour in small portions and 1/4 cup of orange juice and peel .. Fold using a spatula (i folded with my hand )
And now add nuts mix and fold slowly ..
Now pour the cake mix to the tin ..Tap the cake tin to avoid bubbles ..
Bake for 30 minutes in 180 degree for 30 minutes and then remove the cake and cover with a aluminium foil and bake for another 30 minutes at 170degree ..
After that check the cake by inserting a tooth pick or skewer in the centre and if it coming out clean then its done..Otherwise bake for few more minutes (Ovens differ in temp so take care of that )
Take the cake out and allow to cool on a wire rack ..
After cooling completely u can cut and use ..
In my opinion it will become more tastier after one day ..
If u want u can do icing and make it more attractive ..

In a saucepan pour milk , butter ,sugar and egg ..Mix well and heat that mixture by stirring continuously for 1 to 2 minute ..
In a bowl add yeast and pour 1/4 cup of this milk mixture and mix well and keep aside for 10 minute .. (add after the mix cool down to lukewarm stage ,otherwise yeast will die)
Then add this yeast mixture back into the milk egg mixture and stir well …
In a big bowl add maida and salt ..Mix well ..
Easy Donut
Then make a well in the centre and pour this yeast mix and mix well …U will a get a semi liquid mix ..(don’t worry 🙂 )
Close the bowl with a wet cloth or cling wrap and keep aside in a warm place for 45 min to 2 hour for proofing..
The bowl should be large otherwise while proofing it will overflow ..
Now heat oil in a kadai ..
Meanwhile wet ur hands and take small small portions and put in the oil ..or u can follow ad chef doing in the video..
The temperature of the oil should be medium in the beginning then after 2 minutes reduce and cook until golden colour .. u will come to know after cookingthe first batch of donuts ..

The thing is , bit difficult to make round shape with hole as the dough is runny kind ..
I got this recipe from the masterchef masterclass Australia episode ..
So when done remove from the oil and keep in the kitchen tissue ..
Dip in caster sugar (powdered sugar ) and roll ..U can add cinnamon powder in the sugar for a intersting taste..or can fill jam in the middle ..
I added 75gms of butter but original recipe ask for 100gms ..

I couldn’t make X-mas special recipe this year but I am happy to present a lovely yummy dessert Falooda to u… I am sure u all will love this and try for this New Year and make everyone Happy 😉
Royal Falooda
Ingredients
Vanilla Ice cream-6 scoop
Basil Seeds/sabza seeds-2tbsp
Falooda sev or semiya-4tbsp
Strawberry Jelly – 3tbsp
Strawberry Syrup-3tbsp (opt)
Rose essence-2tsp
Mixed fruits Chopped -1/4cup
Sugar-
Vanilla essence-1/4tsp
Chopped nuts-3tbsp
Tutti fruity -2tbsp
Boiled Milk-1 glass
Falooda
Method
The ingredient mentioned above is for 2 glass of falooda…
1.First we have to prepare jelly..
For that boil water and add powder into that and stir well until dissolved ..
To this add equal amount of cold water and allow to set in the refrigerator ..
Here I used 1/2 cup of boiling water ,40 gms of jelly and 1/2 cup of cold water ..
2.Now prepare sev,if u have proper flood sev then well and good
Boil some water by adding some sugar and pineapple essence and yellow colour and add sev and cook till done..
Add some more boiling water to that and allow to cool.. otherwise it will become very dry after cooling ..
Falooda
3.For the rose milk ,boil 1 cup of milk and to that add few drops of rose essence,sugar and red colour .. Allow to cool
4.For the base, i used strawberry syrup ,if u don’t get then don’t worry make some sugar syrup of one string consistency add red food colour and strawberry essence .. Mix well and cool …
5.Boil 1/2 cup of water and soak basil seeds for 15 minutes and drain excess water ..Keep aside ..
6.Finely chop fruits ,here i used banana,pineapple ,apple .. To that add some sugar ,rose essence and vanilla essence .. Mix well and refrigerate ..
7.Chop nuts of ur choice ,I used cashew nuts and pista ..
8.Take out the ice cream from freezer 10 minutes b4 assembling falooda …
So take falooda glass ,add 1 1/2 tbsp of strawberry syrup in the bottom as first layer ..
Then one scoop ice-cream ,then 1tbsp of basil seeds ,then rose milk ,then 1 to 2 tbsp of sev ,jelly,then mixed fruits ,nuts and some syrup , after that two scoop ice cream and top up with mixed fruits ,nuts basil seeds ,jelly ,sev … Decorate a cherry in the top top ..
If u want make different colour of sugar syrup and sprinkle ..
So the yummy Falooda is ready to serve .. Serve immediately and Enjoy 🙂
In a bowl add maida ,cornflour,colour ,salt and curd … Mix well without any lumps …
To this add hot oil and mix well.. Close the bowl and let it rest for 24 hours ..
Next day once again beat the batter with a fork for 1 minute …
The batter should be the consistency of dosa batter ,if u pour from top it must be in the form of one string
Now take a ziplock plastic bag ,pour 3-4 tbsp of batter in to this and in one side make a small hole like we do for frosting our cakes ..
Heat oil in medium heat and press the bag and make two three circles ..i will post a video so u will understand more clearly ..
Fry both sides and remove from the oil to a strainer ..
In a pan add sugar ,lemon juice and water and allow to boil..
Boil till reach one string consistency …
Add fried jalabi to the sugar syrup and soak for 1 minute and remove and place in a bowl ..
Do the same procedure to make the rest…
So the yummy jalebis are ready .Serve hot or can serve with vanilla ice-cream 🙂

Note :
I followed vahrevah’s recipe..I made batter using the amount he mentioned ,but the batter was bit loose for me So I added 1 tbsp of extra maida and 1/2tsp of cornstarch extra to reach the exact consistency … So if u follow my recipe and still having some problem in the batter u can adjust the amount of maida .. Frying Oil should be medium hot ..Otherwise u won’t get the correct jalebi… u will understand after making two or three and don’t crowded the pan ,try to make 2 to 3 each time (otherwise it will stick to each other and diff to remove )if u r using wider kadai to fry then u can increase the no..
The amount of sugar also u can change
