Sweet corn kernels-1 cup

Big Onion-1 small(finely chopped)

Capsicum -3 colours (half each) strips

Tomato-1 small (deseeded ) strips

Spring onion greens-2tbsp (finely chopped)

Olive oil-1tbsp

For dressing 

Olive oil-2tbsp

Lemon Juice-1tbsp

Paprika powder-1/4tsp

Dry red chilly flakes-1/4tsp

Salt-to taste

Sugar- one tsp

Method

Heat olive oil in a nonstick pan until its smokes ..

Add corn kernels and stir well until slightly burnt..

Remove from the pan and keep aside ..

Add little amount of olive oil and heat on high flame ..

Add finely chopped onion along with orange,yellow,green capsicums

saute for 2 minutes …

Take a small airtight container or bottle

Add all the ingredients for the dressing .. Close tightly and mix vigorously …

Now combine corn,onion,capsicum and tomato in a salad bowl and pour dressing on top and mix well ..

Check the seasoning and adjust it …

Garnish with spring onion greens and serve immediately …
