Ingredients

Chana Dal/Kadala parippu-handful of/oru pidi

Ladies finger/vendakka-5

Drum stick/muringakkaya-1

Asafoetida /kayam-1 medium piece

Tomato/thakkali-2 big

Tamarind/kol puli-gooseberry size/nellikka valuppam

Turmeric powder/manjal podi-1/4tsp

Green chilli/pachamulaku-1

Curry leaves/curry veppila-2 strings/2 thandu

Salt/uppu-to taste /avasyathinu

Jaggery/sharkkara-1/4 of 1

Sambar powder-3tbsp(I used Easter sambar powder)

Grated coconut/Nalikeram -2tbsp

Shallots/cheriya ulli-10

Pumkin/Mathnga-4-5 medium pieces

Garlic-1/2 of 1 piece

Water-3 cup

Coconut oil-1 tbsp

Season with /Thalikkan

Mustard seeds/kaduku-1/4tsp

Fenugreek seeds/Uluva-10 seeds

Dry red chilli/unakka mulaku-1

Curry leaves/curry veppila-1 string/1 thandu

Asafoetida /kayam powder-one pinch/oru nullu

Fenugreek powder/uluva podi-one pinch /oru nullu

Sambar powder-2 pinch/2 nullu

Method

Wash dal and pressure cook by adding 3 cup of water ,turmeric powder ,green chilli,1 string of curry leaves ,salt and asafoetida ..

2 whistle is enough ..After 10 minutes open the cooker and add pumpkin ,drumstick,jaggery,tomato(cut into 4 ) ,tamarind juice,6 shallots and cook for another 2 whistle ..

Allow to cool and open the cooker after that ..

Meanwhile heat 1 tsp of coconut oil and sauté ladies finger for 5 minutes in medium flame .. Keep aside ..

In the same oil add 4 shallots,garlic and saute for 2 minutes

Then to this add grated coconut and fry until light yellow shade appears ..

This time add sambar powder to this and add fry for another 2 minutes in low flame ..

Cool this mix and make a fine paste by adding enough water ..

Add this paste and fried ladies finger to the cooker and mix well ..

Allow to boil for abt 15 minutes in medium flame .. Add more curry leaves ..

Check the salt and sourness ..

Now heat coconut oil ,splutter mustard seeds ,fenugreek seeds,dry red chilli,curry leaves one by one and finally turn off the gas and add three powders to this and mix well and pour to the sambar ..

Mix well and close the cooker for few minutes …

So the very very tasty Sambar is ready in no minutes ..

  6. I tried this sambar and it was super delicious. Thanks so much for sharing the recipe. I have one question though, can i add other veggies like yam, carrot etc in this sambar? Or would it alter the authentic sadya style sambar taste?
