Soya chunks is one of the most delicious soy protein which is easily available. It’s a high protein ingredient and has lots of health benefits too. It’s also known as meal maker or soya nuggets too.

It’s an awesome starter and loved by kids too. The mild spicy, sour and sweet taste of the dish is something that can’t be expressed.

Some people say that is has a foul smell and texture. But you can get rid of the smell by boiling it, squeezing out the water and then washing it well. 

Soya chunks absorb the flavour of the masala really well after the water has been squeezed out. So when combined with aromatic spices, this is a wonderful dish that brings flavour to the palate. 

They are widely used in Indian food as they are healthy and has the taste and texture of meat. You can make, curries, dry or semi gravy dishes with soya chunks or even add them to pulaos, vegetable biriyani, veggie stir fries etc. 

It suits well along with rice, chapathi, paratha or even as a snack or starter.  

It’s a must try. This quick and simple dish is a good alternative for meat dishes.

Ingredients 

Soya -11/2 cup or 100 gm 

For Marination 

Kashmiri Chilli powder -1/2tsp 

Chilli Powder -11/2tsp 

Turmeric Powder -1/4tsp 

Salt- 

Curd -1tbsp 

Lemon Juice -1tbsp 

Ginger Garlic Paste -1tbsp 

Curry leaves 

Coriander leaves – 

Water -1/4cup plus 

Cornflour -3tbsp 

Rice Flour -2tbsp 

Garam Masala -1/2tsp 

Cumin Powder -1/4tsp 

For the sauce

Ginger Garlic -1tsp 

Kashmiri chilli powder -1/4tsp 

Garam Masala -1/4tsp 

Cumin Powder -1/4tsp 

Curry leaves – 

Green Chilli -2 

Water – 

Lemon juice – 

Salt – 

Ketchup -1tbsp 

Chilli Sauce -1/2tsp

Method

Soak the soya chunks in hot water for 10 minutes or boil it for a minute and leave it aside for a while. 

Once they are soaked, wash the soya well many times to get rid of its smell. 

You can cut the chunks to two if they are very big. If using the small soya chunks, then you don’t have to cut them. 

Make sure to squeeze out all the water from them and only then marinate it. 

Take a bowl to make the marinade. I usually don’t add the powders to the soya directly. I felt that it makes a lot of difference in adding the masalas directly and making a marinade and mixing. 

Take a bowl and add Kashmiri chilli powder, chilli powder, turmeric powder, cumin powder, garam masala powder, ginger garlic paste, curd, lemon juice, coriander leaves and curry leaves. Mix these well. 

Add cornflour and rice flour to this mix well. You can add any one of these too. 

Add salt and little water to make a thick batter. Give a taste test and adjust accordingly .

Mix the soya chunks to this and marinate it well. Close and keep it aside for minimum 20 minutes. 

Heat a kadayi with oil on medium flame to fry the soya chunks. 

Make sure not to fry on high or low flame. If the oil is too hot ,the soya will burn soon but inside will be uncooked .

And if the oil is not that hot ,it will absorbs a lot of oil. 

Fry them in batches in medium hot oil and make sure that they turn crispy. It may take around 8 minutes or so depending on your flame. 

If you want, you can have them in the fried form too by sprinkling some fried curry leaves and green chillies over it. I prefer making a sauce over it like chicken 65. 

It gives a special taste and flavour. 

Heat another kadayi or tawa with very little oil. heat oil in low flame .

Then add crushed ginger and garlic. 

Saute this for few seconds. 

Add Kashmiri chilli powder, garam masala powder, cumin powder, curry leaves and green chillies. Saute this well for half a minute. 

Usually I add chilli garlic sauce. If you don’t have it, you can add chilli sauce and ketchup instead. Mix this well. 

Add little water, lemon juice and salt. 

Boil this on medium flame. You can add a pinch of colour if you want to get the restaurant like look. 

Let this boil well and then add the fried soya chunks. 

You can adjust the taste by increasing or decreasing the spice, sour or sweet now. 

Once the sauce has boiled, add the fried soya chunks and mix well. 

Our Soya 65 is ready! 

My house is filled with an aroma like chicken 65.

The fried soya is surely awesome but the sauce takes the dish to another stage. Give it a try. 
