Don`t know how many of you are heard of cashew nut curry !!!
In my case, I can’t just imagine my childhood “Vishu” without Vishu Kanji and Cashew nut Curry …Still when I remember those days feel lost ….My Amma used to make yummy cashew nut curry ..On those days we had kashumavu(cashew tree) in most of our houses ..So its easy to make nice curry with fresh nuts. Now i think its not so easy to get those..So now I am using plain nuts (raw with out roasting) …Hope children as well as adults will like this recipe ….
Ingredients
Cashew nuts -200gm(Soak in water overnight . Clean and split into 2 pieces)
Grated coconut -1/2 of 1
Chilly powder-1/4tsp
Coriander powder-1 1/2tsp(u can add more if want )
Turmeric powder-1/4tsp
Curry leaves-few
Salt-to taste
Water -1/2cup
Chopped coconut -few
Big onion-(1/2 chopped finely)
Ginger -a pinch (chopped)
Small onion -2(sliced)
Method
Heat 1 tsp of coconut oil in a pan and saute chopped big onion, curry leaves and ginger .Then add chilly powder, turmeric powder and coriander powder ..Saute till the raw smell goes…Then take a cooker, add cashew nuts ,the fried masala mix water and salt ..Cook it ..(5 whistle approximately)..When its cooked the nuts will be soft ..In the mean time grind the coconut into a fine paste ..Add this coconut paste to the cooked nuts and allow it to boil …Boil it for 5-10 mins … For seasoning heat 1 tsp of coconut oil in a pan , add chopped coconut pieces ,sliced small onion and curry leaves .Saute well ..When it become golden colour add this to the curry … So ur tasty and rich and rare curry is ready..Serve it with vishu katta, rice or ,chapathy
