Ingredients
Tomato-2medium (finely chopped)
Grated Coconut-2tbsp (opt)
Shallots(small onion)-30 no
or
2 medium size big onion
Ginger-small piece
Garlic-1 small clove
Dry red chilly -1
Curryleaves- 1 string
Salt-to taste
Coconut Oil-2Tbsp
Method
Slice small onion or big onion ..
Cut ginger and garlic ..
Heat oil in a nonstick kadai ..
When hot add dry red chilly and sauté till light brown .
To this add sliced onion,ginger,garlic ,curry leaves and salt ..
Saute till the raw smell goes..
Now add chopped tomato and sauté ,cover the kadai and cook for few minutes ..(stirring occasionally )
Open the kadai and cook for few minutes ..
To this add coconut and mix well ..
No need of adding coconut ,but i used to add coconut to get a good volume of chutney ,otherwise have to make large amount for the need ..
Try once adding coconut ,u can feel the difference …
After cooling down ,grind this mix till smooth ..Check the seasoning ..Add if anything lacking ..
Serve with rosa,idly,chapthy..

i never tried red tomato chutney.. i always make the raw (green) tomato one.. will try this one next time.. combo of onion, sounds too interesting..
