Ingredients
Potato(Aloo)-2
Cauliflower(Gobi)-1cup
Chilly powder-1/4tsp
Coriander Powder-1/4tsp
Amchur Powder(dry mango powder)-1/4tsp
Ginger Garlic Paste-1tsp each
Big Onion-1
Green chilly-1
Tomato-1(medium)
Salt-to taste
Oil-1tbsp
Garam masala-2 pinch
Water-1/2cup
Kasurimethi (dry fenugreek leaves)-1/4tsp
Turmeric powder-1/4tsp
Coriander leaves-1tbsp
Hing powder-one pinch
Cumin seeds-2 pinch
Method
Peel and wash the potato..Cut into medium cubes.
Keep them in the water.
Wash the gobi florets and keep that aside .
Heat oil in a non stick pan .
Splutter cumin seeds.Then add ginger-garlic paste
Saute for few seconds in low flame .Now add hing powder and turmeric powder.
Saute well and add finely chopped onion,green chilly and tomato ..
Stir fry for 10 minutes in medium flame .
In between take 1/2 cup of water and to this add coriander powder,garam masala,chilly powder and dry mango powder.mix well.
(if u dont have the dry mango powder,increase the amount of tomato to get the needed sourness.)
When the onion and tomato mixture is well cooked add this masala water along with salt .
Allow to boil well
Finally add potato and cauliflower.
Mix well..Sprinkle some water and close the pan allow to cook in medium flame.
Occasionally stir well.Will take 10-15 minutes
Finally garnish with coriander leaves.
Serve with chapathy,rice ,nan or food of ur choice
