Ingredients
Dates/Eethapazham-500gm
Chilly powder-1 1/2 tbsp
Vinegar-3/4cup
Water-1/2cup
Salt-
Cumin Seeds-1/4 tsp
Mustard seeds-1/4tsp
Curry leaves-1 string
Ginger-2 tbsp (finely chopped)
Garlic-10 pods finely chopped
Sesame Oil -5 tbsp
Sugar-1/2cup
Green chilly-4 chopped
Turmeric powder-1/4tsp
Method
Deseed and chop each dates into 4 pieces and keep aside..
Make a fine paste of chilly powder ,cumin seeds and mustard seeds by adding enough water ..Keep it aside ..
Heat oil in a non stick pan ,add ginger,garlic ,green chilly and curry leaves ..
Saute for 1 minute in medium flame .
Then add chilly paste and turmeric powder into this and saute until the raw smell goes.
Then add salt,vinegar and water ..Boil well ..
After that add dates and sugar into this gravy and stir well ..
Remove from the flame and mix well..Check the taste ..Add salt ,sugar or vinegar if needed..
Allow to cool and transfer to a air tight container..
U can use this pickle after 2 weeks ..
Goes well with biriyani ….
