Onion-1 (finely Chopped)
Green chilli-1 chopped finely
Amchoor Powder(Dry mango powder)-1/2tsp
Coriander leaves-1/4cup (chopped finely)
For the Dough
Oil / Ghee-for spreading
Add right amount of water little by little to the wheat flour along with 1 tbsp of oil and salt.. Knead well and make a tough dough .. Close the dough with a wet cloth and keep aside
Peel and grate beetroot and carrot ..Cook potato and mash well ..Keep aside ..
Heat 1 tbsp of oil and add ginger,onion and green chilli along with little salt ..
Saute until the onion become light golden colour in medium flame ..
Then add all the masala powders and saute well until the raw smell goes..
Now add grated beetroot and carrot along with salt ..
Cook until they are well cooked ..By that time there will be no water ..
Then add chopped coriander leaves and mashed potato..Mix well ..
Check the salt and masala ..Add if anything needed..
Keep aside this beetroot mix and let it cool..
Divide the paratha dough into small balls.
Roll out each ball into a small puri, put a little beetroot filling in the centre and seal the edges.
Roll out into parathas.
Heat tawa,spread some ghee or oil and roast the parathas till they light brown.
Serve with onion,lemon wedges and pickle ..
Its a healthy paratha and a best lunch box dish for kids
NB: Here I used carrot and potato ..its not necessary (but u can easily cheat ur kids 😉 )
