Yogurt -1 1/2 cup(less sour)
Dry red chilli-1 (remove seeds and chop into 4 )
Wash and peel cucumber ..
Grate 2 cucumber into thin long strings and cut the remaining one into small pieces ..
In a bowl add yogurt and beat well until smooth .. Add salt and sugar and mix well..
Combine cucumber with the yogurt ..
Now heat 1 tsp of coconut oil and add saute ginger and when the raw smell goes remove it ,and splutter mustard seeds along with dry red chilli, and curryleaves ..
Pour this ginger and mustard seeds,chilli and curryleaves mix to the raita and mix well..
Finally sprinkle hing and pour this to the cucumber -yogurt mix ..
Check the taste ..Add salt if needed ..
Note : If u want u can add coriander leaves and can sprinkle chilli powder on the top .. Can make variation according to ur taste ..
