Ingredients
Carrot-3 medium
Dry Red chilli-2
or
Dry chilli flakes-1/2tsp
Shallots-10
Curryleaves-2 strings
Salt-to taste
Turmeric powder-2 pinch
Coconut oil-2tbsp
Method
Peel and cut carrot in to long thin pieces ..
Wash ,drain and keep aside .
Crush shallots,dry chilli together ..
Heat coconut oil in a nonstick pan and add crushed mix along with curry leaves..
Saute until the raw smell goes..
Then add turmeric powder and salt ,sauté for few seconds ..
Then add carrot and mix well …
Then close the pan and cook for 10 minutes in low flame..
After that open the pan and stir the carrot in low flame for another 5 minutes ..
Check the salt ..
If ur carrot not sweet enough ,u can add pinch of sugar to enhance the taste …
So the very easy and healthy carrot stir fry is ready to serve …
