Wish u all a very happy Navaratri … So thought of sharing a sweet and easy recipe with u in this occasion ..This recipe was there in my draft for so many months ..When my kids ask for gulab jamun ,I used to buy instant gulab jumun mix (Gits) and make .. Its very nice .But when i saw bhavanskitchen thought of trying her recipe .. It came out very soft and juicy .. So i am sharing her recipe here ..
Ingredients
Milk Powder-1/2cup (i used Amul)
All Purpose Flour/Maida-1 tsp
Semolina/Rava-1tsp
Baking Soda-1/4tsp
Salt-one pinch
Ghee-1tbsp
Warm Milk-to knead (not too hot )
Oil – for frying
For the Sugar Syrup
Water-2cup
Sugar-2 cup(can increase or decrease )
Lemon Juice-1 1/2 tbsp
Cardamom powder-1/4tsp
Rose water-1tsp
Method
In a wide bowl add milk powder,maida,rava and baking soda and mix well ..
To this add milk and ghee and make a very soft dough by kneading for 5 to 10 minutes ..
Cover the dough with nice cloth and keep for 15 minutes ..
Meanwhile boil the water,salt and sugar together in a pan, until sugar dissolves and it becomes bubbly. Turn heat down to keep it bubbling gently.(Check the sweetness ,add more if u want )
2. Dip the spatula in the syrup, lift it out, touch it with the tip of your forefinger to pick a drop of syrup. Be very careful, it can burn your finger! Touch your forefinger with your thumb and pull apart slowly, to see how many threads are stretched between your finger and thumb. Here we need one string consistency..So when u see one string turn heat off and remove from the stove .Add lime juice (to avoid crystallisation),cardamom powder and rose water .Mix well .So the syrup is ready
Now take the dough out and again knead for one minutes ..
Take very small portion and keep it in the centre of ur palm and apply pressure with other palm and rotate to make a smooth ball ..(with out crack..)U can apply very small amount of oil on ur palm ..The ball should be small ..It will become big while soaking ..
Now heat oil and fry these balls in medium heat by slowly rotating the balls slowly till u get a very nice golden colour ..
If the oil is too hot the outside will turn golden brown to quickly while inner side will be raw ..So be careful while frying ..
When the balls are fried remove from the oil and directly to the hot sugar syrup..Allow to soak 45 to 1 hour ..
After that serve hot or cold ..Enjoy ..

Note : u fry one gulabjumun first and see .. If it get cracks ,then add little more water or milk and knead well..
