Carrot-1

Green plantain(pacha kaya)-1

Beans-4

Drumstick-2

Long Beans-4

Vellarikka(Cucumber)-1/4 cup

Yam(chena)-1/4 cup

Padavalanga(snake gourd)-1/4 cup

Turmeric Powder-1/2tsp

Green chilly -4

Curry Leaves-few

Coconut Oil-2 tbsp

Curd-1/2 cup

Salt-to taste

Small Onions -8nos

Cumin seeds(jeera)-1/2tsp

Grated Coconut -1

(U can use more or less vegetables )

Method

At first wash and cut all the vegetables length wise that is about 1 inch length ..

Heat 1 table spoon of oil and add all vegetables and sauce for 5 minutes ..

Then add  ,Chilli powder ,add turmeric powder, ,salt ,curry leaves , green chilli slits (2) 1tsp of coconut oil ..Mix well ..

Close the kadai  and cook the vegetables in a medium heat..Stir Occasionally .

(I am using a nonstick pan so mostly no need to add water ..Otherwise add water to cook the vegetables )

Crush cumin and Small onions and remaining green chilli d curry leaves ..

Add this to the grated coconut and mix well  with hand .. u can add pinch of turmeric powder and salt to this and mix ..(  or  u can give it a quick whip ).

.We don`t want our coconut mix to become  a fine paste ..It should be like we blend for thoran ..

With a fork mix the curd to loosen up the lumps ..Add this curd to the cooked vegetables

and cook for 5 minutes ..

Then add coconut mix and gently mix ..

Then using a spoon gently press the avial and cook for few minutes in low flame till the steam comes ..

At this time if u want u can add crushed onion and green chilli on the top (opt)

Finally sprinkle coconut oil and few chopped curry leaves

Close the pan immediately and let it be like this 5 to 10 minutes ..

Then mix well and serve ..

Note: The spice is entirely depending up on the chilli u use,so change the amount of chilli accordingly ..and same with curd also ..

We prefer sour curd for making avial ..

    Dear Veena, please tell me if we can add ivy gourd instead of snake gourd and should the avial be dry or gravy type.

  9. but Veena ji, Thrissur style aviyal, we never use curd, though the Sothern Keralites use curd. no doubt it is tasty, but the authentic thrissur style, its minus curd.
