Hello friends ..

How are u  doing ?? Did u miss me ??

I am doing great dears 😍

I am writing here after a long gap.

So, many of my subscribers were complaining that u don’t see me here .. So thought of coming back and keep in touch with u dears..

As I was busy with my YouTube videos, couldn’t able to do the blog.

But I think, I should post the recipe here too once in a week ..Right dears ..

Today  I am here with a traditional Kerala, Malabar Recipe- Kalathappam(also known as Kalthappam).

Here I am preparing this in a cooker, u can do the same in a saucepan with a tight lid too ..

So let’s begin

Ingredients

 

Rice-1cup, Preferably Kaima Rice (jeerakasala ) or U can use white rice (( My one cup is 240 ml )

Jaggery -250 gm -300gm

Cardamom-1

Cumin seeds-1pinch

Cooked rice-1tbsp(any type of rice)

Small onion-3

Finely chopped Coconut -2tbsp

Salt-one pinch

Water -1 1/2cup

Coconut Oil-4tbsp

Baking Soda-2pinch

Method 

Soak rice for minimum for4 hours.

Wash well and drain

Then take mixie jar , add rice , cooked rice ,cumin seeds and cardamom (only seeds ) along with 1/2 cup of water.

Grind to a fine paste.

Then add 1/2 cup more water and blend well .. (we have to grind the rice in a small quantity of water first, otherwise we cant grind the rice so nicely)

Pour this finely ground batter to a vessel and keep aside.

In a saucepan add jaggery and pour 1/2 cup of water and melt in medium flame, stirring occasionally.

Then heat 2 tbsp of  coconut oil and roast small onions and coconut pieces in to golden color .Keep aside ,dont through the coconut oil we used for frying these .

By this time the jaggery will be ready ,using a strainer, strain it

Add this hot jaggery mix to the rice batter .

Pour with one hand and mix with another hand continuously to avoid lumps.

Now add salt and baking soda and mix well .. (This batter is very loose ,when i measured this batter I got 3cups of batter )

Now take a cooker,I used 5 L aluminium cooker .

Heat the cooker in high flame

 

Add leftover coconut oil along with another 2 tbsp of coconut oil

Rotate the oil in the sides of the cooker, When the oil is piping hot (the flame should be in   high heat )

Pour this slightly hot jaggery rice flour mix to the hot cooker, add fried   coconut d onion in the top .

Close the cooker ,remove the weight ,and cook for exactly 1 1/2 min in high flame .

Then after 1 1/2 min cook in low flame , exactly for 15 minutes .

After 15 minutes switch off the flame and keep the cooker in a cool place .

Open the cooker after another 15 minutes.

Check the centre of the kalathappam using a tooth pick or fork ..

If it comes out clean ,that means the kalathappam is cooked well.

So allow the kalathappam to cool completely.

Then take out from the cooker .

Cut into the desired shapes using a sharp knife .

U can see many bee hole like shapes inside the appam 🙂

So enjoy  the soft and tasty kalathappam..

Sweet Bread Balls

Ingredients

Bread pieces-10

Milk-1/2cup

Sugar-3tbsp

Method

Take a blender and make the bread into fine bread crumbs .

Now add sugar to the bread and mix ..

Now slowly pour milk to this mix and make a soft dough .(here i used half cup of milk )

Keep this dough for 10 minutes in a tight container.

After 10 minutes make small balls out of this dough .

Heat oil in a fry pan .

When the oil is hot fry the bread balls into golden brown colour (shallow fry them ..when one side is done turn to other side and fry).

So the very tasty and sooooo easy bread ball is ready to serve …Children will love this ..Even adults ….  🙂

Note : The sugar is depends up on u..U can increase or decrease the amount of sugar

Mulaku Bajji/Chilly Bajji(Banana-Pepper fritters)

Ingredients

Basen flour (Chickpeas flour /kadala mavu)-1cup

Banana Peppers/Bajji mulaku-10 no

Rice flour-2tbsp

Kashmiri chilly powder-1/2tsp

Asafoetida powder/hing/kayam – a  pinch

Salt – to taste

Baking soda- a pinch (opt)

Water- as needed

Oil -for frying

Method

Wash and drian the chillies .

Mix  besan powder,rice flour, salt,chilly powder,asafoetida(kayam) powder,baking soda  and water to make  a thick batter(like dosa batter)

Make a partial length wise slit  in each  chilly ( try to not cut the  edges ) .If u want u can cut them to equal parts .It is  not at all spicy ,so no need to remove the seeds from it.

Now dip each  chilly in the batter to  coat well on all sides  .Deep fry them in hot oil .When both sides are golden colour, remove from the oil and drain them in kitchen tissue. Serve hot with  tomato sauce or simply with tea …..

Savala Vada/Thula Vada /Mulaku Vada

Savala Vada …Its a pure nadan tea time snack  recipe ..In my village it is called as thula vada ..But I came to know that it has got 2 other names also ..Savala vada and mulaku vada ..Don`t know about other names … 😉  Its so easy to make and got a nice taste also ..So here comes my favorite vadas recipe

Ingredients

All purpose Flour/Maida -1cup

Big Onion /savala-1(chopped finely)

Green chilly-3(chopped finely)

Ginger -1tsp(chopped nicely)

Curry leaves-1 string(chopped)

Baking soda -1/4tsp

Salt-to taste

Water-1/2 cup

Oil-1 tsp

Oil-for frying

Method

 

Sieve maida ,baking soda and salt..Keep aside

In a bowl add chopped onion ,ginger, green chilli,curryeaves l .Mix well
Then add water and mix
Now add maida mixture and knead to a soft dough
Finally sprinkle one tsp of oil and keep in a tight container for 2 hours .

Now divide the dough into small small balls ..Apply oil or water to the palm of your hands and shape dough into the shape of uzhunnu vada (press each balls between ur palms and make a round shape and make whole in the center using finger .

Heat oil in a kadai .Deep fry the vada in hot oil.When it become golden brown and crisp remove from the oil and drain .Serve with chutney

Potato Bonda

Ingredients

Potato-4

Green chilly-2(finely chopped)

Curry leaves- 1 string (chopped)

Ginger-1tsp(chopped)

Salt -to taste

Mustard seeds-1/4tsp

Oil-1tbsp

Turmeric powder-1/4tsp

Big Onion-1/2 finely chopped

 

For The Batter

 

Gram flour(kadala mavu)-1cup

Chilly powder-1tsp

Asafeotida powder-one pinch

Salt-to taste

Water-1/2cup

Method

Peel and cut the potatoes into small pieces.. Cook them by adding salt …When cooked, mash them well d keep aside..

Heat oil in a kadai ..Splutter mustard seeds then add curry leaves,green chillies ,ginger and onion ..Saute them well…Then add turmeric powder and salt ..Finally add the mashed potatoes ,saute them well and remove from fire….Check the salt …If u want u can add coriander leaves also… When cool make the mixture into small balls

In a bowl mix gram flour,chilly powder,asafeotida powder,salt and water to make a thick batter..

After half an hour dip the balls one by one into the batter and deep fry them…Drain on paper towel ..So the tasty potato bonda is ready to serve..Serve hot with chutneys or sauce ….

Kinnathappam-Thrissur Style

Ingredients

Roasted Fine Rice flour -2cup

Grated Coconut-1

Sugar-3 tbsp(change according to ur taste)

Salt-one pinch

Cumin seeds-1/4 tsp

Cashew nuts-10 (opt)

Fried coconut pieces-2tsp

Coconut Oil-for greasing

Method

Extract thick milk from the grated coconut without adding much water …Take coconut slice from a coconut and chop into fine pieces and fry till it become golden colour..Keep that aside.. Now mix the rice flour with the coconut milk ,cumin seeds,fried coconut ,sugar and salt into the consistency of  dosa batter.Keep this aside for minimum 3 hours

(U can also use jaggery instead of sugar.If so , melt the jaggery , filter it and add to the coconut milk and flour ..)…Now grease plate with oil and pour the batter into the plate till quarter amount .Place this in a steamer and cook.When cooked just check with a fork ..Now remove from the steamer ..When cooled cut in to desired shape..Decorate with cashew nuts

Thrissur Style Kallappam

Kallappam is one of the traditional recipe of kerala ..But this recipe differ from place to place ..In some place kallappam is making without sugar and in some place with sugar . So here i am going to make thrissur style kallappam ..Here in UAE i dont get kallu(toddy)!!!!…..So i am using yeast instead of kallu …..Hope u make this delicious appam…

Ingredients

White Rice (pacha ari)-1cup

Basmathi Rice-1cup

Grated Coconut-8 Tbsp

Sugar-10tsp

Cooked rice-4Tbsp

Salt-to taste

Yeast-1tsp

Water

 

 

Method

At first soak both the rice together for at least 3 hours …

Wash it properly and keep aside…Grind the coconut to a fine paste ….Then mix the rice and coconut paste and grind them by adding required amount of water to a fine paste …keep that aside…Then grind the cooked rice …Then in a blender mix all the pastes ,sugar ,yeast and salt and grind well…The batter should be loose ..I mean to say that the consistency should not be thick(like dosa batter) ..Now allow the batter to ferment for 4 to 5 hours ..After 5 hours stir well the batter ,taste the sugar and salt and adjust if needed…

Allow it to remain for another half an hour …Here i am using steal plates to make kallappam.. U can use idly mould also …So grease the plates either with ghee or oil ..Then pour the batter to the plate ..(don`t pour fully ,pour up to half portion of the plate )…. Now take a idly maker(Steamer) and pour required water and switch on the gas …Place the plates or idly mould in the idly maker and close with the lid ……Allow it to cook for 10 minutes …Then simmer the fire and remove the plates carefully from the maker …Allow the kallappam to cool..Then u can cut into pieces like cake ….So now ur tasty and sweet kallapam is ready to serve.. ……If u want u can decorate with roasted cashew nuts on the top of the kallappam…

u can make kallappam just like the shape of a idly ….

Pazhampori(ethapazham porichathu)/Banana Fritters

Ingredients

Refined Flour(Maida)-2cup

Rice Flour-1tbsp

Cornflour-1tsp

Ripe Banana-4

Sugar-4tbsp (as per ur taste)

Salt- a pinch

Oil-for frying

Fried Sesame seeds-1tsp (opt)

Turmeric powder-1/4tsp or one pinch yellow colour (opt)

Water-

Method

Peel and cut each banana into 4 pieces or if u want small pazham pori u can make it as 8 pieces .

For the batter ,in a blender add maida,sugar,salt,turmeric powder ,cornflour,rice flour and enough water and blend nicely ..I did this to avoid lumps and to get a uniform batter..Then add fried sesame seeds into the batter and mix well..opt only..

..Check the sugar ..If u want more sugar add accordingly…The batter should be thicker than dosa batter.

Then dip each banana slice into the batter and place in to the hot oil ..Oil should not be too hot …Otherwise banana will burn as soon we dip into the oil..so be very careful about the temperature of the oil..Can fry 4-5 pieces at a time based on the size of ur kadai..

Fry both sides till crisp and light golden in colour..

Drain excess oil ..

Serve after 15 minutes …and enjoy ur pazham pori with hot tea… 🙂

NB: U can use wheat flour instead of maida to make a healthy pazham pori… 😉

Ripe Banana Fry/Nentrapazham Fry

Riped banana-2

Method

Cut the banana into small pieces …Heat ghee in a pan ..Then fry the banana till it become golden brown colour ..Turn it and fry the other side also …When it ready sprinkle the sugar into the top of the banana…..Transfer into a serving plate ..Serve hot..

nan-cut.jpgMy friend sunu gave me this recipe .So i tried and it came out well…Its very easy to make and also tastes really good… So thought of sharing it with u ..Children will definitely love this nankutt…So thanks to my dear friend sunu for giving me this recipe…

Ingredients

Maida – 2cups
Sugar – 1 cup (Powdered)
Dalda- 1 cup
Semolina(rava)- 1tbsp
Salt – 1 pinch

Makes approx…40 min

Method

To a vessel add powdered sugar & dalda and mix them and knead to a very smooth texture…..To this add the maida ,semolina & salt d fold in very softly….So that it
forms very soft & smooth dough…Make small balls of the dough & flatten
slightly.Garnishing with dry fruits is optional.Place it on a baking dish…Bake it in an oven which is preheated to 180 degree centigrade for 15 minutes.. After 15 minutes switch off the oven and remove the baking dish …Then transfer this to a serving plate
